One has been quietly ageing in rum barrels for over a year. One was freeze concentrated to push the flavour. One was fermented with a yeast strain that monks have been perfecting for centuries and one was brewed with a 180 minute boil and a touch of smoked malt to coax out every last drop of caramel, toffee and tradition.
